Simple summer skewers
Summer is hurtling towards us and longer, warmer days, mean lots more time for getting outside and enjoying some delicious barbeque! While tossing some burgers or hot dogs on the grill is a great way to enjoy the barbeque season, it's hard to forget that both are rather high in fat and calories. If you want to steer a little bit closer to the healthier side but still enjoy the wonders of outdoor cooking, then perhaps a skewer is right up your alley. Mixing colourful veg, fruits, and meat, these skewers are delicious and better for you than a burger slathered in cheese!
We love these skewers because they mix sweet and savoury. If you've never tried grilled peach then you're missing out!
What you'll need: 4 skewers, 2 chicken breasts, fresh or tinned peaches, BBQ sauce.
How to do it: Cut your chicken breasts into 1 inch square chunks. If you're using tinned peaches, drain and pat dry, if you're using fresh peaches, peel and cut into chunks. Divide your ingredients into four and then start skewering, alternating the peaches and chicken chunks. Brush a sweet and smoky BBQ sauce over the lot and then grill for 15-18 minutes, turning regularly. You might want to recoat with BBQ sauce half way through. Be careful as you eat, those peaches might be a bit messy.
Who says Fajitas have to be cooked in a skillet. This tasty skewer combination can be eaten as is, or removed and piled into a tortilla.
What you'll need: Fajita seasoning (here's a great homemade recipe), Peppers, Onions, Chicken or Steak
How to do it: Cut up your choice of meat into 1 inch chunks. Chop your peppers and onions into similar sized pieces. Toss all your ingredients in Fajita seasoning and then arrange on your skewer. Cook for 2-3 minutes on each side. They should be golden brown. Serve as is, or slide your ingredients off the skewer and into a tortilla. Top with cheese and sour cream.
If you love Hawaiian pizza then this skewer combo is right up your alley. Sweet and tart pineapple combine with chicken and bacon for a delicious skewer experience.
What you'll need: 2 large chicken breasts, 1 pack of streaky bacon, fresh or tinned pineapple (chunks), BBQ sauce
How to do it: Cut your chicken into 1 inch pieces and slice your bacon rasher in two. Wrap each piece of chicken in a rasher and then secure by skewering. Separate the bacon/chicken chunks with chunks of pineapple. Fill each skewer and then brush them over with BBQ sauce. Grill for 15-18 minutes, turning regularly.
What you'll need: Salmon, cherry tomatoes, asparagus spears, courgette, balsamic glaze (you can buy a storebought glaze, or make your own)
How to do it: Remove all skin and cut your salmon in 1-2 inch cubes. Cut your asparagus and courgettes into inch wide pieces. Thread your salmon chunks and veg onto the skewers, alternating between the meat, tomatoes, asparagus and courgette. Next drizzle on either side with a balsamic glaze and use a brush to make sure each piece is coated. Grill on each side for 3-4 minutes.
